The 2026 season is just beginning!
RHUBARB!! While the weather has been up and down lately… both in precipitation and temperatures, there has been an unexpected silver lining! As you can see in the photo, Windover Farm has a bumper rhubarb crop this year!
Rhubarb was originally cultivated in China as a medicinal plant. It did not gain prominence as a food in America until the 18th century! And in case you did not know, you can freeze rhubarb quite easily! Just trim the ends, wash it, then cut into ¾ inch chunks. Place it in your favorite container or a freezer bag and it will be ready when you are. You can make pies, jams, sauces, chutneys and even wine from this amazing fruit/vegetable! (It is considered both, depending on who you ask.) The rhubarb is available for purchase by the pound. Please contact Harold Cook directly to order or if you have any questions… 603-496-5757.
